I found this awesome recipe on a low-carb forum and after making it tonight I decided I had to share the love.
Ingredients: a cauliflower, a handful of chopped onion, spreadable cream cheese (I used whipped cream cheese since it blends easier), shredded cheddar cheese (I subbed this for a Monterey/Cheddar mix), paprika (I couldn’t find paprika so I subbed with dill and chives) and salt and pepper to taste.
Instructions: Nuke cauliflower until soft. Mash the cauliflower, onion and cream cheese until they’re well blended. Stir in the cheese, herbs and condiments. Bake at 350 until brown.
You’re done. Enjoy!
